I have a hard time getting my family to eat asparagus. I have tried many recipes over the years until I ran across this recipe and prepared it for my big Father’s Day lunch. Finally I have a winning recipe and everyone will now eat asparagus.
This recipe comes from a favorite cook book of mine that I cook out of all the time: Eat what You Love by Marlene Koch.
Ingredients
1 ½ pounds asparagus spears, washed and trimmed
2 tsp. olive oil
Salt to taste
Fresh ground black pepper to taste
¼ cup grated Parmesan cheese
Directions
- Preheat oven to 450*.
- Toss the asparagus spears with olive oil, salt, and pepper.
- Spread evenly into a single layer on a flat baking sheet. Roast for 10 to 11 minutes, or until fork tender.
- Sprinkle with Parmesan cheese just before serving or if you prefer sprinkle Parmesan cheese on top of spears during the last 3 minutes of baking. Makes 4 servings.
